Kenkey a Ghanaian dish made from fermented white corn is widely consumed throughout the country by Ga people from southern Ghana.
Kenkey, Dokono. Komi, Konkee as known throughout Africa and the Caribean
It is a white cornmeal dumpling that is fermented and shaped into large balls and then cooked.
There are two varieties of kenkey, Ga kenkey, and Fante kenkey.
Fante kenkey is wrapped in plantain leaves which lends a distinct flavor and color
Ga kenkey is wrapped in corn husks which enhances the corn flavor.
Dokono is eaten with spicy soup, hot pepper sauce, and fried fish. some people also prefer eating it with soup of any kind.
Preparation of Kenkey Fresh Home Made.
- Mix the cornmeal with cornstarch. add water gradually until smoothen to paste.
- Cover the base of the kenkey with a cloth
- Ferment for two days in a warm place.
- Divide the dough into half, one part will be cooked in a large pot of salted water
- Mix it regularly to prevent the dough from sticking to the walls of the pot.
- The second part of the dough
- The dough is divided into portions and rolled into balls and placed in dried corn husks.
- The leaves are tied together with a string to prevent them from opening under the effect of the heat.
- Cooking is done by steaming for about one and a half hours
- Kenkey can be kept for a few days in the refrigerator
- Reheat with steam or in a microwave or be frozen and eaten later.
